Sweet Potato Reishi Brownies

These sweet potato reishi brownies are AMAZING, everything you could ever want from a brownie is all you see right here

Ingredients -

  • 600g of sweet potato
  • 14 pitted medjool dates
  • 80g of ground almonds
  • 100g of buckwheat flour
  • 4 tbsp of raw cacao powder
  • 1 tbsp of coconut sugar
  • 1tbsp of hybrid herbs Reishi mushroom powder
  • 3 tbsp of maple syrup

Method!

  1. Preheat the oven to 180 degrees c
  2. Peel the sweet potatoes. Dice them and place into a steamer for 20 minutes until they become soft.
  3. Add the steamed sweet potato and dates to a food processor. Blend until it becomes a smooth mixture.
  4. Put the remaining ingredients into a bowl, then mix in the sweet potato and date mixture!
  5. Place the mix into a lined baking dish and cook for about 20-30 minutes until you can pierce the brownie with a knife and it will come out dry.
  6. Remove the tray and leave to cool for ten minutes.
